Everyone is looking for raw honey. Our stand on raw honey is honey that has not been heated above a certain temperature that destroys valuable enzymes and nutrients. Some honey vendors prey on the "idea of raw honey" with consumers and we feel that is misleading by selling them crystallized honey which they will have to heat up anyway to properly enjoy it. All of our honey is raw, whether its bottled or sold as honeycomb.
No, we do not flash heat or pasteurize our honey in anyway. Our honey will crystallize very quickly and we make no excuses for that crystallization. This crystallization is a sign of good honey that has not been processed. The larger chain grocer's honey on the shelves are crystal clear for a reason. The larger honey packer and producers heat it very quickly at high temperature(185degrees) to kill the valuable enzymes and nutrients that cause this crystallization. Diatamatious Earth is then added to it. The dirt, pollen and other foreign matter in the honey will cling to the DE, making larger particles for filtration. The honey is then forced through filtration papers, which removes the DE and virtually all foreign matter. The honey is then flash cooled to 135º F. DO YOU REALLY WANT THAT CHAIN STORE HONEY NOW?

Everyone wants pure clover honey. Clover makes for a very light and tasteful honey. We sell our honey as clover honey. Clover is our major contributing nectar source but the bees also forage on other things besides clover. I have seen them our our wild black rasberries, dandelions, and many other sources. I believe that these other sources make our honey unique and complex in taste. "Clover Honey" is a style to us not a pure nectar source. Bee Culture magazine which prices honey by region don't list it as clover. They list both light and amber honey.
Bees are wild creatures that go where they want to and when they want to. The idea of organic honey to us is a sales idea to prey on unaware consumers. Most so called "organic honey" comes from Mexico and Brazil where standards are relaxed and the idea of organic cannot be challenged. Our honey is natural and nothing addded to it.
We have developed relationships with select USA beekeeepers whose practices and ideas are very similar to our own. We produce some varietal honey but never enough to meet that sales demand. We often trade our honey for their honey so we can have a certain variety for our customers to enjoy. We also purchase quantity honey at wholesale and repackage it in conveniet sizes for our customers. As with our honey it is unpasteurized, unprocessed, and unadulterated honey.
Your honey is as good as the day you got it!! Honey has been found in the tombs of Egyptian Pharos and is still edible today!! Honey is quite possibly the worlds most perfect food because it never goes bad or spoils!
